Healthy Remake to a Sinful Classic!
SHORT DESCRIPTION:
This peppermint patty re-done is a healthy makeover to a sinful classic. Impress your friends with a healthy holiday treat that is even better than the original!
RECIPE:
– In your food processor fitted with the S blade, combine all ingredients for the mint filling.
– Blend until smooth and uniform
– Roll the mixture into balls and then flatten into patties gently using the palm of your hand.
– Place on a baking sheet and transfer to the freezer for 20 minutes
– Add the chocolate ingredients to the food processor and process until smooth
– Remove the minty disks from the freezer and dip into the chocolate
– Return to the freezer as needed until hardened
INGREDIENTS:
Mint Filling :
1/3 cup dried shredded coconut
1/3 cup cashews or skinless almonds
2 tablespoons cacao butter, melted (use a warm water bath)
2-3 TB raw agave
1-2 tsp peppermint oil
Pinch of salt
Chocolate:
2 tablespoons cacao butter, melted (use a warm water bath)
1/3 cup raw cacao powder
4 TB raw agave
Touch of salt
